Here We Go!

My husband told me this morning as I was cooking bacon for a frittata that he wanted to go vegetarian. We've both done it in the past, but been not at all vegetarian for a long time. Well, I should say we eat plenty of meatless meals, but just because we like them, not for any reason.

So we're both trying to lose some baby weight and get healthier and meatless meals is a good way to make sure we are eating more veggies and whole grains. Plus my guy has high blood pressure so not a bad reason to eat less meat.

The catch is I'm a professional recipe developer and most often am not making meatless meals. Plus I bought half a pig this fall and most of it is in our chest freezer. I don't want that to go to waste.

So the compromise: meatless meals 5 days a week.

On this week's menu: Black Bean-Spinach Burgers (How to Cook Everything Vegetarian) with roasted sweet potatoes, Black-Eyed Peas and Ginger-Garlic Mustard Greens over rice and I'm going to gussy up some chickpea-vegetable soup I made last week that's hanging out in my freezer. One night we'll have leftovers. Two nights we're going out, and the last night Dan's going to his dad's retirement party so I'll scavenge at home.
